Kurnoth hunters new trample from looncurse

Do they roll a dice per their models (I.e. 3) or per number of enemy models (I.e. 40 dice for 40 gobbos)?

It's one dice per each Kurnoth Hunter. Look at the wording: "At the end of the combat phase, you can pick 1 enemy unit within 1" of this unit and roll 1 dice for each model in this unit. For each 4+ that enemy unit suffers 1 mortal wound." So, if you have 3 Hunters, you would roll 3 dice.
