from my admittedly limited experience/knowledge of Bretonia I'd suggest designing them around the massively terrifying charge of expensive knights. However the Brets have a very large Peasant force so I'd give their cav some sort of bonus like when a mob of peasants charge into a combat the knights are already in the knights can retreat before combat. Or something that encourages synergy between these two disparate parts of their army.
